Strawberry Jalapeño Jam
Ingredients
- 4 cups strawberries, washed, stemmed, and crushed
- 1 cup jalapeños, seeded and minced
- 1/4 cup lemon juice
- 2 ounces powdered pectin
- 7 cups sugar
Directions
Combine the crushed strawberries, minced jalapeño peppers, lemon juice and pectin in a large stock pot. Bring this mixture to a simmer, stirring continually. When it begins to bubble, add in the sugar.
Bring to a rolling boil for one minute, then reduce to low. Skim off the foam and discard.
Turn off the heat and ladle into sterilized jars. Process in water bath for 10 minutes, then allow to cool.
